Researchers from the Oxford University have conducted a study whose results, published in the magazine Flavour, indicate that the use of high-quality, heavy forks and knives give us impression that the food we eat is tastier.
A part of the study was an experiment that involved 130 guests of a restaurant in Edinburgh, Scotland.
All of them were served the same dish, but with a different cutlery.
Guests who eat using quality cutlery (three times havier than all others) said the dish was extremely tasty and also gave high marks for its look and the way it was served. They were ready to pay a 15% higher price than other guests.
- It is very likely that all the positive and negative experience attributed to cutlery is implicitly transferred to our impression of food. This phenomenon is what we call "the transfer of feelings" - explains Charles Mitchell, the author of this study.
He believes that the use of fine cutlery increase the attention we pay to food and, thus, our enjoyment of eating it.
