Lobster - from food for the poor to rich people's menus

Most people connect lobster with food for the rich. But, it was not always the case. Actually, for a long time, this delicatessen was food for the poor.

Lobster has had a far less luxurious reputation only a few generations before. What kind of change then turned it from the food mainly enjoyed by the poor citizens into the one for ultra-rich?

It took big change. More precisely, it took war. Namely, during World War II in USA, system of allowance was implemented which exactly defined food quantity for every citizen.

However since lobster did not have any status , it was not comprised within the allowance system which proved to be the key for its popularity increase.

During the war, all classes started enjoying lobster and it became extremely popular for its taste.

Ten years after the war, lobster established its status of delicatessen. Movie stars soon started ordering it and it became an inevitable food at rich people’s weddings and celebrations.
